INGREDIENTS for 40 cookies

      • 100g FLOUR
      • 100g ALMOND FLOUR
      • 2 teaspoons MATCHA. POWDER. We recommend our HOUSE MATCHA
      • 4 tbs OLIVE OIL or SESAME OIL
      • 1 tbs SOY MILK
      • 4 tbs SUGAR
      • A pinch of SALT

PREPARATION

First of all, preheat oven at 180C/356F.

  1. Wet ingredients: Place a bowl on the scale, measure oil, soy milk, sugar, and salt.
  2. Mix: Mix them well with a spatula.
  3. Dry ingredients: Measure flour, almond flour, and matcha powder.
  4. Mix: Mix them well with a spatula.
  5. Make the dough: Use your hand to mix the dough. It's easier to use your hand as the dough is dry and does not stick together.
  6. Roll out the dough: Roll out the cookie dough to a thickness of 0.5cm or your desired level.
  7. Cut out: Cut out shapes and place them on a silicone mat. 
  8. Bake: Place a silicone mat on a baking tray and bake for 15 minutes at 180C/356F.

INGRENDIENTS

. 1 1/2 cups whole wheat flour (or all-purpose flour)
. 3 large eggs
. 1 1/2 cups milk of choice.
. 2 Tbsp Olive Oil
. 1/2 tsp Old Salt Merchants matcha salt
. 2 tsp Matcha Superior

PREPARATION

1.
In a large bowl, mix together all of the ingredients until fully combined.
2.
Heat a 1/3 of a tablespoon of olive oil or butter in a large non-stick skillet.
3.
When the oil/butter is hot, scoop 1/3 cup of batter onto the pan, and roll the pan around until the batter has coated the pan.
4.
Flip the crepe after 2 minutes and cook until the other side is light brown.
5.
Remove and repeat for the other crepes reheating the olive oil and butter when consumed.

TIP

Serve and eat with your choice of:

One easy way to enjoy the benefits of Matcha for skin is a homemade Matcha bath bomb. With a few simple ingredients, you can avoid the drying effects of a hot bath and instead, enjoy all of the relaxing elements of a warm soak while ensuring that your skin stays healthy and moisturized. 

MATCHA BATH BOMB 

Time: 30 mins + drying  

ACCESSORIES, YOU'LL NEED:

  1. Muffin tin or circular mold 
  2. Large mixing bowl
  3. Whisk

INGREDIENTS

  1. ¼ cup Matcha
  2. 3 tsp olive oil
  3. 10 drops lavender essential oil 
  4. 1 cup baking soda
  5. ½ cup citric acid 
  6. ½ cup unscented epsom salt
  7. ½ cup organic cornstarch 

PREPARATION

Combine dry ingredients in your large mixing bowl and whisk together until well combined. 
Add wet ingredients one at a time, mixing well after each addition. 
Once the mix is ready, scoop equal amounts into your mold of choice (each bomb should be about ⅓ of a cup of the mixture).  Set your molds to cure overnight in an airtight container.  
Draw a warm bath and let your Matcha Bath Bomb dissolve into the water.
Be sure to give your tub a good rinse after draining to prevent any build up.

        • 2 eggs temperature
        • 1/2 cup melted butter 
        • 1/3 cup applesauce 
        • 1 teaspoon fresh grated ginger
        • 1 teaspoon vanilla extract

          PREPARATION:

          1. In a bowl, combine dry ingredients and whisk. Set aside. 
          2. In a second bowl, whisk eggs and slowly add pumpkin puree, applesauce, ginger, vanilla extract, and cooled melted butter. 
          3. Fold dry ingredients into wet ingredients with a spatula. Make sure there are no clumps, but do not over-mix. Pour into a lined loaf pan. 
          4. Bake at 375 F for 45 minutes, then 10 minutes at 325F. 
          5. Let bread cool, slice, and enjoy!

          INGREDIENTS:

           

          • 1 ½ tablespoons Matcha Powder
          • ½ cup of Olive Oil
          • ½ cup Whole Milk
          • 2 tablespoons Poppy Seeds
          • 2 large Eggs
          • 1½ teaspoons Vanilla Extract
          • 1¼ cup + 2 tablespoons (166g) superfine blanched Almond Flour
          • ½ cup + 3 tablespoons (83g) Gluten-Free Oat Flour
          • ¾ cup + 1 tablespoon (168g) granulated Sugar
          • 1½ teaspoons Baking Powder
          • ½ teaspoon Kosher Salt

           

          PREPARATION

          1. In a glass measuring cup, whisk together olive oil, milk, and poppy seeds and let sit for 5 minutes while you prepare the baking pan.
          2. Preheat the oven to 350°F. Lightly grease an 8-inch cake pan with olive oil and line the bottom with a round of parchment paper.
          3. Whisk the eggs and vanilla extract into the liquid ingredients.
          4. In a large bowl, whisk together the almond flour, oat flour, sugar, matcha, baking powder, and salt. Pour the liquid ingredients into the dry ingredients and mix well until just combined. Pour the batter into the pan and use a spatula to smooth the top.
          5. Bake for 45-55 minutes, or until the cake springs back when poked and a toothpick in the center comes out clean or with just a few crumbs. Let cool in the pan for 10 minutes, then invert the cake onto a wire baking rack then flip right side up to cool. I use two wire racks to invert the cake right side up.
          6. Use a fine mesh sieve to dust the cake with powdered sugar.
          7. Serve slices warm or at room temperature with a dollop of whipped cream and a drizzle of olive oil (optional). The cake can sit out in an airtight container for 3-5 days or freezer for up to a month.

          TIPS:

           

          • Avoid over beating the egg whites as it will result in a lumpy cake with too many air bubbles. When lifting your whisk, you want the tip of the peak to fall slightly. Over beaten egg whites will look grainy and lumpy.
          • Mix the egg yolk mixture on high speed. It's ready when it forms a ribbon trail that lasts three to four seconds when dropped from the whisk.
          • When adding the oliver oil, mix in a little bit of the batter first. This helps incorporate the oil without deflating the batter.
          • Make sure to sift the matcha powder and cake powder. Matcha powder is hard to dissolve once it clumps.
          • Matcha cake is done baking when a toothpick inserted in the center comes out clean. Look for a raised center and a golden brown color.
          • Wait until it completely cools before slicing. This helps get smooth, even layers without tearing.
          • The best way to slice layers is to use a cake knife or any long, thin knife with a serrated edge. You can also use a cake leveler for even slices.

This is one of many "nonna's remedies", i rimedi della nonna, and require just a good lemon and some bay leaves.

          Adding Green Tea to this beverage enhances the natural property of the lemon zest and the bay leaves, giving a boost of antioxidants, anti-inflammatories, and vitamins. 

           

          Ingredients per person:

          • Green Tea (3gr)
          • 1 Lemon (zest only)
          • 2 Bay Leaves

          How to prepare:

          1. Wash your lemon
          2. Boil water on the stovetop
          3. Peel lemon zest avoiding the pith (the white part)
          4. Place the peel on the water along with 3 bay leaves
          5. Let it steep for 5 minutes or more, until the water turns to a bright yellow color - hence the name.

          • 4 mint leaves, divided

          • 1/2 ounce simple syrup

          • 1 ounce Hennessy cognac

          • 2 ounces freshly brewed Sorate Hojicha tea, chilled

          HOW TO MAKE IT

          1. Gather the ingredients.

          2. In a mixing glass, add 3 mint leaves, and simple syrup and mix very well.

          3. Add the Hennessy cognac and fresh Sorate Hojicha tea and mix a little more.

          4. Strain into an old-fashioned glass filled with fresh ice.

          5. Garnish with a mint leaf.

          6. Serve and enjoy.

           

          TIPS

          To get the most flavor out of your tea leaves, brew it with hot water then chill it. Follow the recommended brewing time on the package at first. You can always make adjustments to suit your taste.

          disappointed after trying this matcha directly after finishing my rockys osada tin. i was excited since this is supposed to be “the spot” to get matcha in nyc so i was expecting it to be good. its not bad its just average and honestly pretty chalky/grainy textured even afer fine sifting and whisking well. and theres an unpleasant bitter taste especially towards the bottom of my drink even after mixing and shaking it around to keep it from separating. i would definitely stick to ippodo and rockys in the future.
