These light and fluffy matcha pancakes are served with fruit, greek yogurt, and a drizzle of honey. These pancakes are super easy to make, and the natural green color makes a stunning presentation. Perfect for St Patricks day with your loved ones.

 

Ingredients: 
  • 1 cup all-purpose flour
  • 1 tablespoon of sugar 
  • 1 tablespoon matcha powder 
  • 2 teaspoons baking powder 
  • ¼ teaspoon salt 
  • 1 cup of milk
  • 1 egg
  • 1 tablespoon of greek yogurt 
  • 1 handful of fresh berries 
Directions: 
Step 1: 
Whisk flour, matcha, baking powder, sugar and salt together in a bowl. Make a well in the center of the mixture; add 1 cup of milk, and the egg. Whisk batter briefly until just combined resulting in a smooth mixture.

Step 2: 
Spray a pan with non-stick spray and heat over medium-low heat. Transfer 3 spoonfuls of the batter onto the center of the pan. Cook until small bubbles start to form, about 1 minute. Flip the pancake and cook until the edges are lightly golden brown.

Step 3:
Stack the pancakes and add a tablespoon of greek yogurt on top, fresh berries and a drizzle of honey. Enjoy!
