If you are a frequent champagne drinker, you would know that champagne is crafted from specific grape cultivars, each contributing unique flavors and characteristics to the final product.  Some popular Champagne cultivars include Chardonnay and Pinot Noir.  


Matcha also has various cultivars. Matcha is made primarily from the tea leaves of the Camellia sinensis species. Different cultivars of this tea plant are used to produce Matcha, each offering unique flavor profiles, colors, and qualities. At Sorate, we have four unique cultivars that make up our matcha.


YABUKITA

  • The most widely used cultivar in Japan
  • Known for its balanced flavor profile, vibrant green color, and pleasant aroma.
  • Has good balance of sweetness and astringency
SAMIDORI
  • Known for its deep green color and mild, sweet flavorless astringency
  • Often used for high-quality matcha.
ASAHI
  • A rare and high-quality cultivar with a deep, rich flavor and creamy texture.
  • It is known for its bright green color and smooth taste.
OKUMIDORI
  • Valued for its rich, umami flavor and bright green color.
  • Has a milder astringency
  • Often blended with other cultivars to enhance flavor
Cultivar Matcha

Matcha is made up of either single or blended cultivars. A lot of people think that it is better to use single cultivars, but it's really all about purpose and preference.

SINGLE CULTIVAR
Single cultivar matcha is made from leaves of only one specific cultivar. Since it is a sole cultivar, it allows the unique characteristics of that particular cultivar to shine through. It is preferred by enthusiasts who enjoy experiencing the pure essence of a particular variety.

BLENDED CULTIVAR
Blended cultivar matcha is made by blending leaves from multiple cultivars. It can offer a more balanced and consistent flavor profile by combining the strengths of different cultivars. Blends can offer a harmonious flavor profile that appeals to a broader audience.

disappointed

disappointed after trying this matcha directly after finishing my rockys osada tin. i was excited since this is supposed to be “the spot” to get matcha in nyc so i was expecting it to be good. its not bad its just average and honestly pretty chalky/grainy textured even afer fine sifting and whisking well. and theres an unpleasant bitter taste especially towards the bottom of my drink even after mixing and shaking it around to keep it from separating. i would definitely stick to ippodo and rockys in the future.
